Feta & Capers in Baked Tomatoes
Ingredients
- 12 tomatoes
- 250g feta cheese
- 3 tbs capers
- 1 egg, lightly beaten
Directions
- Preheat the oven to 160C
- Slice the tops from each tomato and scoop out the flesh and seeds with a teaspoon. Discard half and place the rest in a bowl
- Sprinkle the inside of each shell with a pinch of salt, then turn upside down and leave to drain on paper towel for 45 minutes
- To the tomato flesh add feta cheese and capers and mash until combined. Season to taste and then beat in the egg until the mixture in thick and sticky
- When ready spoon the cheese mixture into each tomato shell and replace the lids. Put the tomatoes in a baking dish that will hold them securely and bake for 10 minutes
- Turn of the oven, but do not remove the tomatoes for 5 minutes, then serve
